Carrot-Apple-Orange Juice à la Vitamix

To put a new kitchen appliance, the Vitamix blender, through its paces, I tried out this refreshing vegetable-fruit juice drink. True to everything I heard about the Vitamix, it blended the hard carrot beautifully, bringing all 3 items in this trio to a quick, creamy finish.

I added the orange as an afterthought. The drink needed a little more sweetness for my taste and I didn’t want to add more sweetener. That did the trick.

2 carrots, peeled and cut in 2″ to 3″ sections
1/2 large apple, quartered
1/2 navel orange, peeled
ice cubes
1 tblsp agave nectar or to taste
6 oz. water

Add carrots, apple, orange and ice to Vitamix blender. Blend on high for about 1 minute until smooth.
Slow blender speed and add water and agave nectar.

Makes about two glasses of juice

(Variation: instead of apple and orange, use 1 peeled mango and 1 celery stalk)
